<p>Pour the water into the bread machine pan. Sprinkle both types<br />of flour and cover water completely. add yeast. Set to dough&nbsp;cycle. When dough cycle has finished, switch machine off, but leave the sponge (poolish) inside, with the lid closed, for&nbsp;2-8 hours, depending on how sour you like your bread to taste.</p>
<p>Remove the bread pan from the machine and pour in the water for the dough. Sprinkle each type of flour over the water. Add salt &amp; sugar in separate corners. Add yeast in the center of the flour. Set to dough cycle.</p>
<p>When dough cycle has&nbsp;finished, place dough on a lightly floured surface. Punch it&nbsp;down gently, then shape it into a plump, round ball. Place on a lightly oiled baking sheet. Cover with a large glass bowl&nbsp;or lightly oiled clear plastic wrap and leave to rise in a warm place for 30-45 minutes, or until almost doubled in bulk.<br />Preheat the oven to 425 F.</p>
<p>Dust the top of the loaf with&nbsp;flour. Cut 3 vertical slashes across the loaf, then cut 3 more slashes horizontally across the loaf. Transfer the baking sheet to a rack that is mid to lower bottom of the oven and bake for 40 minutes, or until it is golden and sounds hollow when tapped on the base. <p>Directions:<br />Place all of the ingredients in your machines fully assembled pan (withthe exception of those ingredients listed under &#8220;add at beep&#8221;). Select thedough cycle and press start.</p>
<p>About 10 minutes after your machine has started kneading the dough youneed to open the lid and check the consistency of the dough. The doughshould be starting to form a smooth round ball. When you touch the doughwith your finger it should be slightly tacky to the touch however no doughshould remain on your finger when you pull it away.</p>
<p>If you dough it too dry add 1 tbsp. of water at a time (allowing themachine to knead for a minutes or so between additions) until the dough isthe proper consistency. If the dough is too wet add 1 tbsp. of flour at atime (allowing the machine to knead for a minute or so between additions)until the dough is the proper consistency. These types of adjustments arenot unusual and don&#8217;t mean there is something wrong with the recipe.</p>
<p>If this recipe has &#8220;add at beep&#8221; ingredients you need to either turn onthe add ingredients beep function, choose your machines cycle that has anadd ingredients beep or if your machine has neither of these you need toadd these ingredients during the last 10 minutes of your machines finalkneading cycle.</p>
